Pinches and dashes

A dash, pinch and smidgen are informal: measuring-spoon sets label them 1/8, 1/16 and 1/32 of a teaspoon, but many cooks use them loosely. They are fine for seasoning to taste, not for exact recipes.

Table salt versus kosher salt

These weights are for fine table salt. Kosher salt has large, light crystals, so a teaspoon weighs roughly half as much (depending on the brand). When a recipe gives salt by weight, weigh it.
