Why flour weights vary

A cup of flour can weigh anywhere from about 110 to 150 grams depending on the flour and on how the cup is filled: scooping packs it, while spooning it in and levelling gives a lighter cup. These conversions assume spooned and levelled cups. For reliable baking, weigh flour in grams.

Plain and wholemeal flour

Plain flour is the UK name for all-purpose flour, and wholemeal flour for whole wheat flour; use those entries for UK recipes.
